Posted by: jdoochin

Every now and then I like to have themed dinner nights. Does anyone know why sticking to a theme during dinner makes it a little more enjoyable? Me either. Nonetheless, last night was Chinese food themed night. Below includes my Asian cuisine meal for two:

Frozen Appetizer

General Chang's Chicken Spring roll is a great frozen appetizer with grilled chicken, broccoli and cabbage. Visit PF Chang's site for more appetizers and Asian meals.

Main Dish: Sesame chicken and noodles

Ingredients:

                                                              1/3 cup rice vinegar

1/3 cup thinly sliced green onions

                                                              2 tablespoons honey

                                                              1 tablespoon reduced-sodium soy sauce

                                                              1 tablespoon grated fresh ginger

                                                              2 teaspoons Asian garlic-chili sauce

2 6 ounces refrigerated grilled chicken breast strips

12 ounces dried udon noodles or whole-wheat spaghetti

                                                              3 tablespoons toasted sesame oil

2 medium yellow, red and/or orange sweet peppers, cut in bite-size strips

Directions
1. In medium bowl stir together vinegar, green onions, honey, soy sauce, ginger, and garlic-chili sauce. Add chicken; stir to coat. Set aside to allow flavors to meld.

2. Meanwhile, in large saucepan cook noodles in boiling water about 8 minutes until just tender.
Banana not-icecream

Posted by: rydra_wong

Con: requires use of a food-processor or blender, which can be hard for those of us with noise sensitivity.

Pro: minimal prep, lasts indefinitely in the freezer, takes only a few minutes to make, no cooking required, compatible with a very wide range of special dietary requirements, is mysterious food alchemy.

Taken from Instructables: 1-Ingredient Ice Cream:

Take a banana or bananas, peel, chop into chunks, then put in a bag in the freezer.

When desired, take out your frozen banana chunks, put them in a food processor, and blend them.

The result is amazingly creamy in texture, and way sweeter than regular banana, for reasons I cannot fathom.

I don't eat a lot of sugar, and I actually find the result too sweet; I'm going to be experimenting with blending in extra ingredients, including other fruits or cocoa powder.

ETA: If you need/want to take a supplement that's in powder form, blending it in seems to work very well (I tried this with a scoop of whey protein).

ETA2: If you are okay with dairy, blending in some Greek yoghurt is amazingly delicious.

comments
