- half or quarter teaspoon crushed garlic (or one clove)
- half or quarter teaspoon sambal oelek (or dried chilli flakes, or one small chilli pepper)
- a pinch of five spice
Substitutions:
- other nut butters will do if you're allergic to peanuts but not other nuts
- white vinegar or apple cider vinegar instead of lime juice if more readily available
- kecap manis (sweet soy sauce) instead of the soy sauce and sugar/sweetener if you prefer the flavour, or to save a step
If you need to thin the sauce, peanut oil or vegetable oil might work better than adding water.
It's also good with rice, e.g. adding it to the water when cooking rice, to make peanutty rice, or adding it instead of the soy sauce when making fried rice, to make satay fried rice.
