I'd think with fresh tomatoes it'd need even less attention? I'm not quite sure, but my mother's favourite recipe is somewhat similar: sautée eggplant, onions and garlic in olive oil in a cast-iron pot, add quartered tomatoes, sprinkle with herbs, cover and leave alone for an hour. Just from the tomatoes alone that is quite juicy enough to make sauce.

Goes really well with rice too (especially whole rice), which is another thing you can put on and walk away from for half an hour.
